Food industry and packaging technology (Part I)

1. Background of China's food industry

1. Changes in food consumption of Chinese residents in the past decade

1) the consumption of animal food (meat, aquatic products, milk and eggs) has increased, and the food structure is more reasonable and more nutritious

2) the consumption expenditure of wine, beverage, tobacco, dried and fresh melons and fruits increased significantly

3) fast food industry and sweet food restaurants, convenience food and microwave food increased significantly. Pursue the diversity and convenience of food tastes (such as clean vegetables, semi-finished products, quick-frozen foods, convenience foods, and the identification of new polypropylene and regenerated polypropylene snack by using the characteristic absorption band and coherence coefficient mode of infrared spectrum in this study. Welcome to learn more about the details, etc.). Residents are eating out more and more

4) consumers have enhanced their awareness of environmental protection and advocate "green" goods and "environment-friendly" packaging. Consumers' health awareness is enhanced and they refuse artificial colors and preservatives; Accept low-fat and low calorie foods and beverages

2. The food processing industry has become the largest industry in China.

according to the statistics of national authoritative departments, the average annual growth rate of the food industry in the past 10 years is 10.2%. In 2000, the sales revenue of the national food industry was 783billion yuan, which has become the largest industry in China

with the economic development and the increase in the income of minority residents who bring their own shopping bags in urban supermarkets, China's "Engel's coefficient" has gradually decreased (52% in 2000 and is expected to drop to 45.5% by 2020), the food consumption structure has been significantly improved, and the food consumption has shown an upward trend. For example, the per capita consumption expenditure of urban residents in 2000 was 4998 yuan, an increase of 41.3% compared with 1985 (after deducting price factors, the actual increase was 27.3%), with an average annual increase of 5%. Grain consumption has decreased significantly, and the varieties of staple foods have been diversified and finished

3. Current situation and review of China's food and packaging machinery manufacturing industry in China achieved rapid growth in the 1990s, with an average annual growth rate of output value of about 24%, ranking 12th in the whole machinery industry. According to incomplete statistics, there are now more than 4000 food and packaging enterprises in China, of which more than 1900 are food machinery enterprises, with an output value of 13.5 billion. In the food and packaging machinery industry, there are about 50 enterprises with an output value of more than 50million yuan

however, the domestic food packaging machinery industry has the following problems:

1) there are few high-tech products and the technical level is low. Compared with similar foreign technical products, the overall level is 20 years behind

2) weak enterprise foundation, lax enterprise management and backward technical means such as design, process, equipment and testing have led to unstable quality and poor reliability of products and accessories

3) weak technical force, less investment in research and development, long development cycle of new products, and slow transformation and application of scientific research achievements

4) the production capacity of general level and ordinary specification products is surplus. There are many low-level repeat products in China, and the supply exceeds the demand

II. Development potential and trend of China's food industry

1. Development potential of the food industry

although the proportion of the total output value of the food industry in the national total industrial output value has risen to the first, the overall development level is still low. China's food industry has great potential in processing range, processing depth, processing structure and so on

(1) the ratio of total output value of food industry to total agricultural output value

the ratio of total output value of food industry to total agricultural output value is a symbol of the development level of food industry in a country or region. The ratio of developed countries to Taiwan is 1.3:1, while that of mainland China is 0 4∶1。

(2) the proportion of industrial processing of food consumed by urban residents

the proportion of industrial processing of food consumed by urban residents in China is only about 35%. Almost all food resources in economically developed countries have to be processed before they can enter the market. For example, the processing rate of agricultural products in the United States is more than 90% and that in Western Europe is 88%

(3) processing utilization rate and value-added rate of food resources

in economically developed countries, the value-added of food industry can reach three times of the price of agricultural raw materials, while in China, it is only 1.6 times

therefore, the development trend of China's food industry can be classified as:

① expand the level of food processing, improve the comprehensive utilization of resources and increase the added value of the food industry, so as to adapt to the development trend of diversified, nutritious and convenient food consumption structure of urban residents

② promote each region to develop food processing industry with characteristics and advantages according to its own resource conditions, make its structure and scale more reasonable, and realize regional differentiation and professional cooperation

③ break through traditional food resources, strengthen the development and application of various new food resources and food varieties, such as protein, wild plants, animal food, new resources of grain and oil, marine bioactive substances, marine animals and plants. (to be continued)
